Chocolate Walnut Fudge (with dried Cranberries)

If you love to indulge in chocolate desserts but find baking quite intimidating, fudge is an easy going no-bake chocolate recipe. Chocolate fudge requires very few ingredients and a great gifting idea. The best part of making fudge is that you have endless possibilities to alter the flavours as per your taste and requirement. Chocolate goes well with a lot of other flavours like orange, nuts, caramel n sea salt, lemon, berries etc. You can easily make a batch beforehand and store in refrigerator and enjoy this delicious gooey which just melts in your mouth!

While making fudge, it is important to balance the flavours. As chocolate is combined with condensed milk, the fudge can get too sweet.

Hence I have used a combination of 75% and 55% dark chocolate from Amul. In this way, the fudge will not be too bitter in taste. Incase you like bitter taste, you can opt for 75% or more darker chocolate.

Ingredients:

  • 400 gms i.e. entire can of Condensed milk (I have used from the brand Amul)
  • 350 gms dark chocolate. ( I have used combination of an entire bar i.e. 150 gms of 75% dark and rest 200 gms of 55% dark chocolate from Amul)
  • 4 tsp of salted butter in room temperature
  • any nuts of your choice (This recipe includes roughly chopped walnuts, almonds and dried cranberries)
  • Parchment paper to line the base of any glass/ steel container. Try to use a square shaped one as its easy to cut the fudge in equal size. You can also use an aluminium foil incase you don’t find a parchment paper.

Procedure:

We start by lightly roasting the nuts for 4-5 mins and roughly chop them once cooled down to room temperature.

Next, roughly chop dark chocolate and put them in a deep vessel to double melt. You can do with double boiling method (i.e. place the vessel over saucepan with boiling water. In this way, the chocolate melts with steam coming from boiling water.) Make sure you stir the melted chocolate in regular intervals to avoid lumps.

Else, you can easily melt the chocolate in an oven with timer of 30 seconds, take out and mix and again pop into the oven for few seconds until chocolate melts completely.

Once chocolate is completely melted, add 400 gms i.e. entire can of condensed milk ( I have used from the brand Amul) and gently fold this heavenly mixture.

You will see that the chocolate and condensed milk mixture gradually thickens and then you add approx 3-4 tsp of butter and continue heating until the mixture is smooth and well combined.

Once this mixture is well combined, remove from the heat and transfer into square shaped glass or any prepared pan and spread evenly. You can pop some more nuts and cranberries on top of fudge for aesthetics.

Let the fudge set in refrigetator for 4-5 hours and then cut into square sized bars.

Fudge will slightly hard to cut initially, but if you let it rest for 5 mins, it will be easy to cut.
