Piyush Recipe

Piyush reminds me of days when my parents used to take me Hotel Prakash in Dadar. This sweet chilled drink was a refreshing end after hot and spicy missal pav or sabudana Wada.

Piyush would resemble like lassi but taste and texture is different.

Piyush is made from the famous Maharashtrian dessert called “shrikhand”, made of thick creamy hung curd.

Piyush drink is a unique twist to regular shrikhand and can easily be made under 5 mins if shrikhand is made. Please make sure shrikhand made is not flavoured one.

Ingredients:

This recipe will be sufficient for 2 glass as shown in the picture above.

  • 4tbsp shrikhand
  • 2tsp sugar/ powdered sugar
  • 1/4tsp nutmeg powder
  • 1/2 tsp cardamom powder
  • 4-5 tbsp yogurt (regular)
  • few strands of saffron soaked in 2 tsp warm milk (optional, can be replaced by 1 drop of yellow gel food colour)
  • sliced pistachios and almonds, chironji for garnish.

Procedure:

In a blending jar, take approx 4 tbsp of shrikhand. Since it is very thick, we add about 4-5 tbsp of regular curd. You can adjust the quantity of yogurt as required. Then add 2 tsp of sugar/ powdered sugar (as shrikhand is already sweet you can skip/ reduce sugar if you don’t want your drink to be more sweet) 

Add 1/4 tsp of nutmeg and 1/2 tsp of cardamom powder. If you have an entire nutmeg, grate it into a powder from and then add to the blender. Water is ideally not required in this recipe as yogurt already has water content in it. Add few strands of saffron soaked in 2 tsp of warm milk (optional). Yellow gel food colour can also be added as an alternative. (1 drop)

Blend these ingredients in pulse mode initially and then on first speed level for few seconds only. Please note that if you blend the mixture too much, the drink may end up being too runny.

Pour the delicious drink in tall glass and garnish it with sliced pistachios, almond, saffron and chironji.

You can store the drink in fridge before serving. Do try out this cool refreshing drink to enjoy your summer!
